The Retriever Weekly spoke with Tom Deluca, Chartwells District manager about the changes to come to the Dining Hall by Fall 2009. Here is what he had to say.
TRW: What changes will be brought to the dining hall and why?
TD: There will be quite a few changes. We have redesigned the service area to be much more open and accessible for students. Also, our Pulse On Dining concept will allow for much more interaction between students and our associates by moving the cooks and production people into service areas. Another significant change will be that the facility will be tray-less, allowing the dining hall to use much less water that would have been used for cleaning of the trays and it will eliminate a substantial amount of food waste. This ties in with the university’s sustainability practices. Also, the lighting will be enhanced, wireless internet access will be added and there will be two soft-seating areas complete with 60″ screens wired for both an intranet display board and cable tv.
TRW: What instigated the need for change?
TD: It was long overdue, and the fact that the dining hall, at many times, is underutilized by certain sectors of the campus community, such as commuter students and faculty and staff. The vision is to create a facility that is welcoming and inviting for all members of the UMBC community.
TRW: Will the food be affected at all or is it just aesthetic renovation?
TR: No, we will be changing our menus and offerings. With the new design, we will be able to offer more cooked-to-order foods and we will be able to better highlight our Balanced Choices healthy options along with adding more ethnic and vegan/vegetarian options.
TRW: How long will it take?
TD: What is the prospective date that the dining hall will be finished by? Renovations begin on May 22nd and are scheduled to be complete by mid-August.
TRW: How major will the renovations be? Size? Will it affect the dining hall’s surrounding area?
TD: There will be a new entrance developed off of wing 1 that will change some sidewalks along the Poplar St side of the dining hall and will also add a brick patio similar to the entrance near the Outtakes C-Store.
TRW: How much will the renovations cost?
TD: The total cost for the Campus Dining hall once completed, including what we have already accomplished with the Kosher Korner, Outtakes C-Store and the Wing 2 renovations will be approximately $2 million dollars.
